Ingredients:
- Leftover rice (recipe is assuming you have a cup of leftover rice)
- Two medium onions, diced
- Garlic, minced
- Any additional vegetables you have (carrots, bell peppers, cabbage, frozen broccoli, corn)
- Soy sauce
- Oyster sauce
- Sesame Oil
- Sriracha
Method:
Heat some oil in a frying pan or a wok and add your diced onion and minced garlic. Stir till the onions become translucent, but still retain some bite. Then add whatever other vegetables you have. We like to chop broccoli, and grate some carrots and add those too, as well as the whites of a spring onion. (But tbh, this works so well with just onion too). Sauté for a bit, and then stir in your rice, after which put the lid on and let it steam through for about two to three minutes. Next, make a well in the center of the rice and add three tablespoons of soy sauce, two tablespoons of oyster sauce, and a big squeeze of sriracha. Mix well, and add a teaspoon of sesame oil over the top. Now sprinkle the greens of a spring onion and toss through, and you’re basically done. This goes so well with a runny fried egg on top.
